Matsiro 70% Dark Chocolate
When terroir meets French heritage
Where do the beans come from?
The beans come from the Mateza Cooperative in the Sambirano Valley, characterized by its red soil, a distinctive feature of the region in the northwestern part of Madagascar.
The Sambirano River ensures optimal hydrometry for cocoa production and other surrounding crops. The local microclimate and rich biodiversity contribute to the unique and complex aromas of this fine cocoa.
The beans are carefully roasted to preserve their delicate aromas.
Aromatic notes
With only three ingredients (neither lecithin nor vanilla), Matsiro 70% is distinguished by its intense, refined flavours. Vibrant notes of raspberry and cherry burst onto the palate from the first bite, offering a fruity, tangy freshness. Subtle nuances of citrus zest follow, adding liveliness and lightness.
Aromas of fig and subtle floral notes reveal themselves, adding a soft, complex depth to this exceptional dark chocolate couverture.
