A simple muffin recipe that can be made by anyone. The milk is infused with cinnamon and coffee to add a unique flavor to the muffin. The muffin is topped off with an almond streusel to add texture to the final product.

    pastry flour
  • 8.7 oz
    sugar
  • 0.5 oz
    coffee beans
  • 2 stick(s)
    Cinnamon
  • 1.1 oz
    baking powder
  • 0.2 oz
    salt
  • 5.2 oz
    eggs
  • 12.1 oz
    milk
  • 0.4 oz
  • 6.9 oz
    butter
  • 3.5 oz

Preparation: Muffin

  1. Roast coffee beans and cinnamon for 15 minutes at 163°C (325°F)
  2. Add to milk and infuse for 15 minutes
  3. Next day, mix all of your dry ingredients
  4. Mix all of your liquid ingredients, including melted butter
  5. Gently fold your liquids into your dries
  6. Bake at 190°C (375°F) for 5 minutes
  7. Then 163°C (325°F) for 15 minutes

    butter
  • 3.5 oz
    sugar

Preparation: Streusel dough

  1. In a Stand mixer with a paddle attachment and mix all the dry ingredients at a slow speed 
  2. Cut the butter into small pieces
  3. Slowly add the butter to the dry ingredients mixture
  4. Mix until all the ingredients are well incorporated
  5. Spread over the top of the muffin before baking
